Chia? Yep. Coconut milk? Check. Mango? You betcha. Panela? Triple check.
Not feeling how hot it is this summer and heaven forbid you turn the oven on?! Look no further.
- 1/2 cup chia seeds
- 1.5 cups coconut milk
- 1/2 cup water
- 2-3 tbsp panela (sub honey or maple syrup)
- 3/4 cup diced mango
- In a container of your choice (use one or four, you choose!), add chia first, followed by panela, water, then coconut milk. Stir well several times until all ingredients are coated in the coconut milk and panela is melted.
- Let sit on counter for 10 minutes to eat immediately or place in fridge overnight for a tasty treat in the morning. Top with mango or any other fruit to your liking.
