Balsamic Dressing & a Salad

It’s been a while! After all the indulging of recent months, sometimes you need vegetables, right? 

Never a huge fan of salads, this is one of the exceptions. Anything with avocado pretty much calls my name. 

Don’t skip the avocado friends! Hass is life.

Balsamic Dressing & a Salad


Serves 2

  • 2 cups spinach
  • 2 cups lettuce of choice
  • 1/3 cup carrots, sliced 
  • 1/3 cup red onion, thin slice
  • 1/3 cup olives, sliced
  • 1.5 avocado, diced
  • 1/3 cup cherry tomatoes, quartered
  • 1/2 cup protein of choice (I used chopped chicken thighs with a bbq rub!)
  • 5 tbsp balsamic vinegar
  • 3 tbsp good quality olive oil
  • Salt & pepper to taste


  1. Arrange ingredients in a bowl in a fancy way to take pictures for your friends and fans on Instagram.
  2. Throw ingredients into a large mixing bowl, toss with balsamic, olive oil, salt and pepper.
  3. Split into two bowls. Or not. Your choice.
  4. Eat.
