It’s been a while! After all the indulging of recent months, sometimes you need vegetables, right?
Never a huge fan of salads, this is one of the exceptions. Anything with avocado pretty much calls my name.
Don’t skip the avocado friends! Hass is life.
- 2 cups spinach
- 2 cups lettuce of choice
- 1/3 cup carrots, sliced
- 1/3 cup red onion, thin slice
- 1/3 cup olives, sliced
- 1.5 avocado, diced
- 1/3 cup cherry tomatoes, quartered
- 1/2 cup protein of choice (I used chopped chicken thighs with a bbq rub!)
- 5 tbsp balsamic vinegar
- 3 tbsp good quality olive oil
- Salt & pepper to taste
- Arrange ingredients in a bowl in a fancy way to take pictures for your friends and fans on Instagram.
- Throw ingredients into a large mixing bowl, toss with balsamic, olive oil, salt and pepper.
- Split into two bowls. Or not. Your choice.
