Shrimp [almost] Pesto Pasta

So there I was in the kitchen, set on making pasta with shrimp & pesto. I blended up all my ingredients, I spooned it onto my pasta and started to chow down.

Basil Garlic Mayo

I tried this for the first time at a burger joint. It was the perfect dip for my side of fries. I knew I would attempt to replicate this at home because I just couldn’t get enough of it! Basil Garlic Mayo Tools needed: food processor or blender Ingredients 5-7 large Basil leaves, washed 1/3…

Kale Pesto w/ Rotini Pasta

I really love kale. This time it’s kale pesto. Since pine nuts are super expensivo, I subbed walnuts and sometimes use almonds instead. Still really tasty, still has that nutty flavor, and as long as you have a few good pieces of fresh garlic and olive oil, it’ll be great! Kale Pesto w/ Rotini Pasta…

Soy Marinated Flank Steak

When you find a good piece of beef, the less you do the better. In Argentina this cut is called Vacio. It translates to flank steak in the US. They sometimes have more fat than meat in the US. So if you’re in the US, find a fat piece of flank steak as best you…

Broiled Brussels Sprouts

Brussels Sprouts get a bad rap. Yes they can taste awful, but it’s all in the execution. Salt, pepper, olive oil and cayenne pepper can go a long way with this dish. Season liberally! These baby cabbages are crispy, crunchy, smelly and delicious. They start on bake and end on broil. Each time I find…

Panamanian Hojaldres

These fried pieces of goodness bring me back to Panama. My grandma Victoria taught me the recipe after someone became completely obsessed with them! They are great to eat with meats made in a sauce or with a simple slice of cheese (so I hear) or to scoop up eggs. The dough keeps in the fridge…

A little Za’atar here…

I clearly can’t get enough of this wonderful spice blend. I made this ridiculously easy meal since I had a fresh batch of the Za’atar Hummus on hand. I could’ve done without the rice but I couldn’t find any pita at the time! Perhaps my next recipe? 🙂 A Za’atar Meal Serves 2-3 Ingredients for…

Sundried Tomato & Walnut Pesto

Sundried tomatoes are such a great addition to any dish. I sneak them in whenever I can. Be sure to use oil packed ones, as they have a richer flavor. Sundried Tomato & Walnut Pesto Ingredients 1/2 cup walnuts, toasted 1/4 cup sundried tomatoes, in oil 2 cups basil, loosely packed, remove most stems 1…

Za’atar Hummus

When you have really good hummus, you find yourself wanting to put it on everything. On sandwiches instead of mayo, a dollop on your salad, with your chips instead of salsa.  The za’atar really brings this to another level. Make sure you use the best olive oil you can get your hands on. Za’atar Hummus…

Balsamic Dressing & a Salad

Sometimes you need vegetables, right?  Never a huge fan of salads, this is one of the exceptions. Anything with avocado pretty much calls my name.  Don’t skip the avocado friends! Hass is life. Balsamic Dressing & a Salad Ingredients Serves 2 2 cups spinach 2 cups lettuce of choice 1/3 cup carrots, sliced  1/3 cup…

Grilled Chicken on a Toasted Baguette

Whenever I get a great piece of french bread something tasty is bound to come of it since the base is already so perfect. You can’t go wrong with french bread. It’s perfect for breakfast, lunch or dinner meals (can anyone say, garlic bread?). This recipe is perfect for leftover grilled chicken you might have…

Potato, Egg & Caramelized Onion Tart

You’ll want to take the time to caramelize those onions. Trust me. They are such a wonderful flavor in this tart. The key to the potatoes, is, to slices them super super thin (mandolin anyone?) and if you choose, microwave them for a few to soften them. On to the recipe! I made the crust…

Chia Pudding & Mango

Chia? Yep. Coconut milk? Check. Mango? You betcha. Panela? Triple check. Not feeling how hot it is this summer and heaven forbid you turn the oven on?! Look no further.  There is ZERO cooking in this recipe. The best part is it stays in the fridge ready for you to eat at a moments notice!…

Salchipapa!

They serve this everywhere in Colombia. Naturally I had to jazz it up a bit. Homemade fries make this so delicious AND I’m guilty for throwing the sausage in the fryer after the fries instead of using another pan. Oh well! It’s quicker and that means it’s in my belly that much sooner.

Quinoa, Tabbouleh Style

Quinoa is just plain fun to eat. You either like the nutty texture or you don’t. I happen to be a big fan of it. Cold or hot, quinoa makes a great addition to any meal or as a main stay.
